Any of the Amiga design team. I remember reading some of their interviews in Compute! magazine back in the heyday of Commodore. I wish I'd kept them, to be honest.
I also wonder if anyone did a sit-down with Jim Butterfield, or someone like that. (seeing a theme I bet... heheh)
I’d love to see a follow up from the folks who contributed to https://www.folklore.org/ — I know there’s a lot of contributors there, and I know it’s Apple focused for this request, but that’s where I’m at. It’d be great to see some follow up interviews on some of the articles (my favorite read is the one about DuckTales… which is tied with the one about the Sony floppy disk drive). You may have to pace who you can speak with or who you can find to speak with, but this could be a nice idea for an ongoing series.
